Default EPS files from Photoshop

I don't really know that much about Photoshop, so anybody know why I can't always save a PSD files as an EPS and retain vector data? The vector option is sometimes greyed out: it varies from file to file. I'm using CS2 Mac, and I always update text layers when the program warns me.
