Default Windows 7

I have been using Windows 7 for about two years now but I am still having trouble getting my head around the concept of 'documents' and 'my documents' Could someone please explain it to me?

At the present moment I have 'documents' with folders and 'my documents' with more folders which includes another 'my documents' with even more folders. It is a mess!
