Can you define your own text for the specimens?

Yes, the layout editor provides inspectors that allow full editing of the text or alphabet section of layouts. I tried to make every aspect of a layout field fully editable.

If so, can you define specimen text in Unicode characters?
Does it recognize fonts of which the file names contain Unicode characters?

Yes, FontCat is fully Unicode aware as it is a Cocoa application.
