Default Needing a Mac email client

For quite a while I've been using Apple's Mail client. It used to keep copies of all sent mail but the latest unpdate seems to have a default setting that deletes all sent mail more than 1 week old.

I now have no record of when I sent jobs or invoices out!

I doubt that I can do anything to recover the old sent mail (which I had kept since 1998) but I don't think I can continue to use software where the publisher suddenly decides it would be convenient to delete all my records.

So, I'm looking for a replacement mail server for my Macs. What would you recommend?
